Piatella, a modern Australian restaurant with a European influence, incorporates wide-ranging influences into its menu and counts pasta as one of its crowd favourites.

Bill and Aspa Bourgazas, owners and operators, were inspired to conceive Piatella after a trip to Europe sparked the idea.

And if you were wondering whether it paid dividends, the proof is in the pasta — in the best of possible ways.

Pasta, a staple in a lot of households, can do extraordinary things to a palate in the right hands.

Fresh pasta, boiling in a roomy pot, with generous seasoning and a slither of oil in that narrow window of time between too long and too soon, is the foundation of wide variety of taste-packed dishes.

Spaghetti Marinara, a tasty marriage of plump tiger prawns, scallops, mussels and calamari, splashed with tomatoes, chilli and garlic, and washed in white wine sauce, is the right kind of way to enjoy a lunch time.

Meanwhile, Piatella’s Beef Ragu is traditional European beef ragu, slow-cooked for 12 hours, so it can sponge braised tomato, red wine and oregano. Enjoy it over a warm nest of supple Penne pasta.
